Delicious vanilla wafer cake with whipped cream frosting
You are going to love this vanilla wafer cake with whipped cream frosting! This recipe happened by accident when I needed to take dessert to Sunday dinner with our family. I didn’t want to make a boring old cake so I searched my pantry. I found some vanilla wafers, coconut and walnuts. The results were absolutely delicious.

This cake is very versatile. You can add or take away ingredients to cater to your taste buds. Plus the moist cake with the light, fluffy whipped cream frosting is like a party in your mouth. My kids loved it.

Start with the Vanilla Wafer Cake
Most of people have a cake mix hanging around their pantry. The fact that you don’t have to get all the ingredients from scratch will save you time and money. It’s wonderful.

Whisk together the cake mix, eggs oil and water until combined.

Now add the nuts, vanilla wafers and coconut. Whisk all the ingredients together until well combined. You can replace the nuts with chocolate chips if you have picky eaters.

Pour into a greased bundt pan and cook in the oven at 350 degrees for about 40 minutes.

Make your frosting
This is one of the best frosting recipes I’ve ever made. I originally found it here. It is very light and fluffy but sturdy at the same time. My mouth is watering just thinking about it.

Throw all of the ingredients into the mixer except the cream.

Mix these ingredients together until well combined and then slowly add the heavy cream into the mixer while it is still mixing.

Whip until the cream can hold a stiff peak (2-3 minutes). Scrape the bottom of the bowl as needed while mixing.
Add the finishing touches
Wait until your cake is completely cooled. I made the mistake of spreading it too soon and it started to melt a bit. Take it out of the bundt pan onto a cake platter. Then generously spread the whipped cream frosting.

Bundt cakes always look so fancy and yet they are so easy to make. You can decorate for whatever occasion you would like. Since Valentine’s Day is coming up, I bought some cherry sours and heart sprinkles. Another idea would be to decorate the top with fresh strawberries or raspberries.
