80 Make ahead breakfast burritos to feed a crowd
I really don’t know anyone who doesn’t like a breakfast burrito. So, when I had to feed brunch to 80 people in my home, I knew these make ahead breakfast burritos was just the ticket. It wasn’t as hard as I thought, but they were definitely delicious. Check it out!
So, my son recently got baptized and we invited all of our family over for brunch afterwards. I was trying to think of something different we could eat that would feed 80 people. Well, breakfast burritos were just the ticket. With a little bit of elbow grease, I was able to make the best breakfast burrito recipe that everyone loved. You can make them ahead to feed a crowd or keep in the freeze for busy weekday mornings. Check it out.
Gather your make ahead breakfast burritos ingredients
The great part about these breakfast burritos is that they have fairly simple ingredients. That way, everyone will love them from toddlers to adults. Think recipe is for 80 breakfast burritos, but if you don’t need quite that many, you can cut the ingredients in half. Here’s the ingredient list:
- 6 lbs pork sausage
- 80 ready-to-cook tortillas (not corn tortillas)
- 8 lbs tater tots
- 2 cups half & half
- 5 dozen eggs
- 8 cups shredded cheddar cheese
Cook the tater tots
Divide 8 lbs of tater tots onto two greased cookie sheets. It’s a good idea to spread them out as evenly as you can. It’s okay if there are a couple layers of tots on each sheet. They will still cook evenly in the oven. Cook the tater tots according to the instructions on the packet.
Brown sausage and cook tortillas
You’ll probably have to divide the sausage onto different pans unless you have a giant griddle. I divided the sausage into fourths and slowly browned each section unless all of it was cooked. Spread a little olive oil on each large skillet before you start cooking. Make sure you cook the sausage on medium-high heat until it’s almost crispy. It adds a delicious texture and taste to the burritos.
While the sausage is cooking, you will want to start cooking the tortillas. Afterall, it will take a while to cook 80 tortillas. I basically cooked the tortillas throughout the entire process. You can used pre-cooked tortillas but I just don’t think they are as yummy.
Cook the eggs
Next, you’ll need to crack all the eggs including all egg whites and egg yolks, into a large bowl and mix all of them with 2 cups of half and half. I mixed all of the eggs by hand but you might want to use an immersion blender. There’s just so many eggs. Then, divide the eggs onto frying pans and cook them in sections on medium-low heat. Make sure you are constantly stirring and scraping the bottom of the pan until they are fully cooked. You don’t want them wet at all. Once your eggs are done, combined them with the sausage in a really big bowl.
Assemble your breakfast burritos
Once your tater tots, breakfast sausage, eggs and tortillas are all cooked, you’re ready to start your assembly line for your breakfast burritos. Your assembly station should have separate bowls with the egg/sausage mixture, tator tots, shredded cheese and a pile of tortillas.
Then, on each flour tortilla, add 4 tator tots, about 1 Tbsp of shredded cheese and 1/3 cup of sausage/egg mixture. Fold up the lower 1/3 of the tortilla, then wrap the left side over the ingredients and finish with wrapping the right side around. You can just wrap your burrito however you want, just make sure the sides of the tortilla are folded and nothing is falling out. If you want to get a little crazy, you can add your own special mix-ins such as black beans, bell peppers, refried beans or bacon bits.
Cook breakfast burritos
You’ll want to cook your breakfast burritos in batches as you finish assembling them. I would fill an entire cookie sheet with burritos and then cook them immediately while I continue assembling. Leave a finger’s width between each burrito to leave room for them to cook. Spray the burritos with cooking spray before cooking in a 400 degree over for 12-15 minutes.
Cover burritos in aluminum foil
For the last step, allow your burritos to cool completely. Then, wrap each one individually in aluminum foil. Store all of them in a freezer bag or airtight container for up to one month to avoid freezer burn. This entire process from start to finish took me four hours. However, it went pretty quickly.
Reheat frozen burritos
If you want to reheat your burritos in the oven, you can place them on a cookie sheet and cook them in a 400 degree oven for 30-40 minutes until cooked through. I accidentally cooked mine for an extra 30 minutes. They were a little crispy but they still turned out great. You can also reheat them in the microwave or the air fryer.
Pair your make ahead breakfast burritos with a little sour cream, pico de gallo or salsa. So good! They are a great way to start you day for busy mornings as grab and go meals. They are perfect for the entire family.
