Delicious crockpot nachos in two easy steps

We recently had some friends come stay at our house for a few days. So, I decided to make this quick and easy recipe and everyone loved it. You can double this recipe really easily and it makes so much food! Check it out!
Gather your ingredients
You might already have most of the ingredients in your pantry for this recipe. And it’s kind of a dump and go dinner. Here’s what you’ll need:
- 3 chicken breasts
- 1 can black beans (drained)
- 1 1/2 cups frozen corn
- 1 can Rotel tomatoes
- Taco seasoning
- 8 oz cream cheese
- Shredded cheese
- Avocados
- Tortilla chips
- Lime
- Cilantro lime dressing
This recipe feeds about 6-8 people. But if you’re feeding a crowd, you can double or triple it.

Step #1: Throw everything in a crockpot
The first step is to take your chicken breasts and place them in the bottom of a large crockpot. Then, sprinkle a generous amount of taco seasoning over the chicken. Next, add your drained black beans, corn and Rotel tomatoes. If you don’t have can’t tomatoes, you can also add a container of salsa instead. Let all of that cook for about 4-6 hours on high or 6-8 hours on low.

About 30 minutes before you’re ready to eat, shredded your chicken and add one 8-ounce block of cream cheese. Stir it all together.

Step #2: Prep your toppings
Slice some limes and chop up some avocados as toppings for your nachos. You can also have shredded cheese, sour cream and cilantro lime dressing as other toppings.

To assemble everything, add a layer of tortilla chips on your plate, then the chicken mixtures and then all of the toppings. You can also substitute tortilla chips with white rice if you want. My sister-in-law introduced this crockpot nachos recipe to me years ago. She uses it for family dinners, Super Bowl parties and on weeknights with her kids. It’s an awesome recipe to have on hand. I guarantee you’ll use it all of the time.

Delicious crockpot nachos
Ingredients
- 2-4 chicken breasts
- 1 can black beans
- 1.5 cups frozen corn
- 1 can Rotel tomatoes
- 1 tbsp taco seasoning
- shredded cheese
- sour cream
- avocados
- limes
- cilantro lime dressing
Instructions
- Place the chicken at the bottom of a large crockpot. Sprinkle taco seasoning over the chicken. Then add the drained beans, corn and Rotel tomatoes on top of the chicken. Cook on low for 6-8 hours or high for 4-6 hours.
- About 30 minutes before you're ready to eat, shred the chicken and add one 8-ounce block of cream cheese. Once it's all melted, stir until it's all mixed.
- When you're ready to eat, place a layer of tortilla chips on your plate, then add the chicken mixture and all of your toppings.
