Easier-than-you-think Chicken Pot Pie
Chicken pot pie is the ultimate comfort food. Moist chicken, veggies and a creamy sauce inside a flaky pie crust is too good to pass up. Here’s how you can make your own tonight and you’ll be amazed at how easy it is.
For years, I was always too intimidated to make chicken pot pie. But then I decided to give it a try. Now, this recipe is a family favorite. I make it on a regular basis and all of my kids eat it. So, let’s get started.
Gather chicken pot pie ingredients
Often, I usually have the ingredients already in my fridge. It’s that kind of a recipe. So, here’s what you will need:
- 1/3 cup margarine
- chopped 1/3 cup onion
- 1/3 cup all-purpose flour
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1 3/4 cups chicken broth
- 1/2 cup milk
- 2 1/2 cups chopped cooked chicken
- 2 cups frozen mixed vegetables
Make your sauce
You’re going to start by making a white sauce by melting the butter in a saucepan over medium heat. Then add the chopped onion and cook for a couple of minutes. Stir in the flour, salt and pepper until combined. Gradually stir in the chicken broth and milk until it’s bubbly and thickened.
Add veggies and cooked chicken
The best part of this recipe is that you only need to dirty on pan. Once your sauce is ready, mix in the chick and veggies. Mix until well combined.
Pour sauce in crust and cook
The last step is to line a pie plate with a refrigerated pie crust. Gently pour the mixture into the crust. Then, cover the entire pie with another crust on top. Fold under both layers of the sides of the crust and then form a decorative curls around the edge with your fingers. Cook in the oven at 350 degrees for 30-40 minutes. You may want to cover the edges of the pie with tin foil about 15-20 into baking.
This recipe makes a lot of filling, so you can make one big chicken pot pie or you can split it into two and give one to a friend or save for later.
