Mini sugar cookie bites with whipped cream frosting
Oh my, these mini sugar cookie bites are so freaking good. And they are the cutest little homemade desserts you’ll ever make. They will be a hit at your next baby shower, family gathering, wedding reception or birthday party. You need to make these today!
I’m always looking for an excuse to experiment with new desserts and yummy treats. So, when I found this 48-cup mini cupcake pan at a yard sale, I had to make something delicious. I made this mouth-watering twist on a cookie classic: sugar cookies. But the best part is that they are easier than sugar cookies and debatably better. Here’s how to make them.
Gather your mini sugar cookie bites ingredients
Sugar cookie ingredients
- 1 stick butter
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 1/2 cups all-purpose flour
- 1/2 teaspoon salt
- 1/4 teaspoon baking soda
Whipped cream frosting
- 4 ounces softened cream cheese
- 1/4 cup granulated sugar
- 1 teaspoon vanilla extract
- 1/2 teaspoon almond extract
- 1 cup heavy cream
Other supplies
- 48-cup mini cupcake pan
- Sprinkles
- Strawberries or blueberries (optional)
Make your sugar cookies
Preheat your oven to 375 degrees F. Spray your 48-cup mini cupcake pan with nonstick cooking spray. Next, you’ll want to cream together all the wet ingredients. First, cream together your butter and sugar until it’s light and fluffy. Then, add your eggs, one at a time, mixing after each eggs. Don’t drop your egg shell accidentally in the mixer like I did! Finally, mix in the vanilla.
Now, in a separate bowl, whisk together the flour, salt and baking soda. Add your wet mixture to the dry mixture. You should have the consistency of cookie dough.
Prep and cook your cookie bites
Spray your 48-cup mini cupcake pan. Take a small chunk of cookie dough and roll it into a ball and place it into one of the cup on your mini cupcake pan. Repeat for the remaining 47 cups. Then, make a small indent into each of the rolls of cookie dough so that it’s pressed into each cup.
Frost and decorate your mini cookies
Now for the fun part! Using a frosting bulb, squeeze a dollup of frosting on to each individual cookie bites. A little goes a long way because this frosting is so rich. Then sprinkle whatever toppings onto the frosting that you would like. Since it’s getting close to Valentines’ Day, I added the cutest sprinkles. But you can do whatever you want!

Mini sugar cookie ingredients
- ½ cup butter
- 1 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 2 ½ cups all-purpose flour
Whipped cream frosting
- 4 oz softened cream cheese
- ¼ cup white granulated sugar
- 1 tsp vanilla extract
- ½ tsp almosd extract
- 1 cup heavy cream
Instructions
- Preheat oven to 375 degrees F. In a large bowl, cream together butter and sugar until light and fluffy. Add eggs, one at a time, mixing after each egg. Mix in vanilla.
- In a separate bowl, whisk together flour, salt, and baking soda. Add to wet mixture and mix until just combined.
- Place small balls of dough into all 48 cups of a mini cupcake pan. Press each ball of dough lightly with the back of a teaspoon. Bake for 10-12 minutes, until light golden brown.
- While the sugar cookie bites are cooking, add all the frosting ingredients except the heavy cream into a mixer. Mix well until combined. Slowly add the heavy cream while the mixer is running and continue to mix until stiff peaks form (about 2-3 minutes).
- Place a dollup of frosting onto the top of each mini sugar cookie bite after they have cooled completely. Sprinkle with any toppings you desire.
